Great idea for a thread, Dan! The covers to Peter Saxon's Trilogy (the Unfeeling, Enemy, and the Warring Sky) were all done by the great, late Brian Knight. Besides being very accurate and beautiful paintings, the nice thing about them is that they are all 'waraparound' paintings which extended over the spine and on to the back cover. I wish I could find some unspoiled pristine versions of them, without the spine and all the type. Anyway, here's the cover for the third book in the trilogy about "Frank Thompson, RFC" in which his "M" Squadron flies SE5a's against Gothas bombing England. I can hardly remember ever reading the books - I just bought them for the cover art!
