Matt,
There has been some excellent WWI fiction written over the years, you just need to dig a bit to find it.
In the Company of Eagles by Earnest Gann is my favorite WWI aviation novel.
Winged Victory by V. M. Yeats is a novel that is almost autobiographical. It's also an excellent read.
A fun, sci-fi/horror novel you may want to check out is
The Bloody Red Baron by Kim Newman and Janet Title. In this novel the WWI pilots are vampires. It's a fun book with a good grasp of history.
As for role playing, you may want to check out three (or four) board games:
- Dawn Patrol -- I've not played Dawn Patrol, but the description has always intrigued me. Players create characters that start off with little experience and very little skill, but improve over time (if they survive).
- Blue Max -- this is a great dogfighting game with a campaign component where, again, new pilots gain skill as they stay alive over several engagements. I've played Blue Max quite a bit and it's my favorite WWI aviation board game.
- Canvas Eagles (an improved, free version of Blue Max) -- I've not played this because I'm very happy with Blue Max, but a lot of folks swear by this title. It's availble for free from the linked web page. Some assembly, however, is required.
- Finally, check out Wings Over France, a very good squadron management solitaire game. It's not exactly role-playing, but you do keep track of individual pilots and their stats as they try to make it through "Bloody April."
EDIT: This thread probably belongs in either "Books and Magazines" or "Games and Flight Sims."
