I hope I'm not to late to this thread.
I'd like to see a film made about Richard Bong, the top US ace of WWII. Pleasant and quiet fellow. Well liked by his contemporaries. Pretty girl friend. Pappy Boyington said, "Just name a hero and I'll prove he's a bum". He'd have a hard time pinning Bong. Boyington had a TV show made about him (at least based on his story). I guess Bong doesn't fit the formula these days.
Another story I'd love to see would be about movie stunt pilots during the twenties and thirties. In particular I'd like to see a story revolve around Frank Clarke and Roy Wilson, Von Bruen and Baldy respectively in Hell's Angels. Legend has it that they had an epic air battle, unarmed, during the filming. I still haven't been able to find out what their problem was. A woman or two headstrong pilots that wanted to prove they were the best? George Roy Hill said that the battle between Waldo Pepper and Ernst Kessler was based on the Clarke/Wilson fight.
And I'll second Ed Bertschy's idea for Paul Mantz. His story would be a special effects feast!
