There's been quite a few books dedicated to Mannock's life and victories. In no particular order, some are:
Ace With One Eye - The Life and Combats of Major Edward Mannock VC, DSO (2 bars), MC (1 bar) Royal Flying Corps and Royal Air Force.

i'm more into german aces, and never really found anything on allied aces (bookwise, i mean), but this is great. amazon, then! thank you!

 Hi Emily! You should really get a copy of "Flying Fury" by McCudden.
I have just picked up a copy of "Air of Battle" by Capt Willie Fry who flew all types of Aircraft from early in the war till the very end, 11 Victories & a MC. Just one of the largely unsung British pilots.
Rainbase here on the forum has an ebay store with heaps of good 2nd hand WW1 books at very low prices. Check him out or send him a PM.

yes its good to read both sides of the Conflict. There were some very interesting Brits, Canadians, Aussies, New Zealanders, South Africans etc.
I recommend you take a look at the recent thread in "Book & Magazines" which was "What is the Best Book----"
Gives some great suggestions.
By the way love your title for work in progress "Red in the Skies"!
Watch out for my next post in "Aircraft-Colours & Camo" which will be titled "How many pilots flew Red Albatross'" Still working on some details before I post.
